It was my son’s seventh birthday recently. In our home, whoever has a birthday gets to decide what meals are put on the table for the day. For him, enchiladas won hands down, but more so since I began to make this version for them.

It all began with my desire a year or so ago to recreate the beautiful flavours of other cuisines, many of which I wasn’t so confident about and so would use packet mixes or jar sauces (yes, believe it or not, I did it too!), and enchiladas was one of them. We have always enjoyed this dish, but it has been requested and eaten with far more enthusiasm since I decided to recreate my version of the dish instead of relying on packet mixes (as amazing as they have been for us!)
So when I made this for my son’s birthday, I knew I wouldn’t have a lot of time to stand by a stove, stirring the sauce to perfection on the big day. I knew I wanted it to be quick and painless. So I made the sauce, and prepared the chicken and cheese (chopped and grated respectively!) the night before once the children were in bed. Then, when it came to dinner time, all I had to do was reheat, cook chicken, assemble and fling it in the oven, and we were eating before the first game of UNO was done!
And you know what? It’s always a sign that your recipe was a success when the plates are scraped clean by your children 🙂
Hope you enjoy this as much as they did!
